How to serve it by age?

6-8 months

Wash the leaves and cook until soft, then mash into a puree; drain the cooking water and consume it fresh.

Finely chop the cooked purslane and give it mixed with yogurt or soft dishes.

12+ months

You can bring it to the table as an unsalted purslane dish (sauteed or with yogurt).

Because the stems can be fibrous, cook and soften them and chop finely; do not give raw, firm-stemmed purslane.

  • Do not give it raw; cook thoroughly to reduce oxalate and nitrate.
  • Do not leave the cooked dish at room temperature for long, as nitrate can convert to nitrite; give it fresh or store it in the refrigerator and reheat only once.
