    Trim the purslane: Remove the thick stems, wash the leafy parts in plenty of water and leave to drain.

    Chop the vegetables: Dice the cucumber, halve the cherry tomatoes, slice the spring onion into thin rings and finely chop the parsley.

    Make the dressing: In a small bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, a pinch of salt and a pinch of black pepper.

    Combine: Place the chickpeas, purslane and chopped vegetables in a large bowl, drizzle over the dressing and toss gently.
