Melon-Banana Chia Pudding — A Cooling Summer Dessert for 2-Year-Olds

A cold pudding made with chia seeds, milk and ripe banana, topped with fresh melon. A cooling, naturally sweet dessert for your 2-year-old on hot summer days, with no added sweetener.

    Mash the ripe banana well in a bowl with a fork until smooth.

    Add the milk and a pinch of vanilla to the mashed banana and stir.

    Add the chia seeds and stir occasionally for 2-3 minutes so they don't clump.

    Cover the bowl and chill in the fridge for at least 3-4 hours (preferably overnight) so the chia swells into a pudding.

    Stir before serving; if it is too thick, loosen it with a little more milk.

    Dice the melon into small, soft cubes and add them on top of the pudding.

    Serve cold to your little one with a small spoon.
