Veggie Chicken Mini Meatballs – Spring Finger Food Fun
These colourful little chicken meatballs are packed with carrot and peas, baked in the oven, and completely salt-free — a wholesome, easy-to-grab finger food your little one will love.
Ingredients
- 250 gr minced chicken breast
- 1 medium grated carrot
- 3 tablespoons cooked peas
- 3 tablespoons rolled oats
- 1 large egg
- 1/4 teaspoon garlic powder
- 1/2 teaspoon dried mint
- 1 tablespoon olive oil
Directions

1) Preheat your oven to 190°C and line a baking tray with parchment paper.

2) Place the rolled oats in a small bowl, add 2 tablespoons of water, and leave to soak for 5 minutes.

3) Put the minced chicken, grated carrot, peas, soaked oats, egg, garlic powder, and dried mint into a large bowl and mix everything together thoroughly.

4) Pinch off walnut-sized portions of the mixture and gently flatten each one in the palm of your hand to form small, flat patties — you should get around 16–18 pieces.

5) Arrange the meatballs on the prepared tray with a little space between each one, then drizzle the olive oil over the top.

6) Bake in the preheated oven for 20–22 minutes, until lightly golden on top.

7) Allow to cool until just warm before serving. They're lovely alongside a simple plain yoghurt dip or a few slices of fresh tomato.
