Veggie Chicken Mini Meatballs – Spring Finger Food Fun

These colourful little chicken meatballs are packed with carrot and peas, baked in the oven, and completely salt-free — a wholesome, easy-to-grab finger food your little one will love.

Ingredients

Directions

  1. 1

    1) Preheat your oven to 190°C and line a baking tray with parchment paper.

  2. 2

    2) Place the rolled oats in a small bowl, add 2 tablespoons of water, and leave to soak for 5 minutes.

  3. 3

    3) Put the minced chicken, grated carrot, peas, soaked oats, egg, garlic powder, and dried mint into a large bowl and mix everything together thoroughly.

  4. 4

    4) Pinch off walnut-sized portions of the mixture and gently flatten each one in the palm of your hand to form small, flat patties — you should get around 16–18 pieces.

  5. 5

    5) Arrange the meatballs on the prepared tray with a little space between each one, then drizzle the olive oil over the top.

  6. 6

    6) Bake in the preheated oven for 20–22 minutes, until lightly golden on top.

  7. 7

    7) Allow to cool until just warm before serving. They're lovely alongside a simple plain yoghurt dip or a few slices of fresh tomato.

🌱 Why is it nourishing?

Chicken protein supports muscle development and healthy growth. Beta-carotene from carrots strengthens eye health and boosts the immune system. B vitamins in peas fuel energy production and support the nervous system. Oats act as a great source of fibre, helping to keep little tummies happy and digestion on track. The perfect finger-food size encourages fine motor skill development as your baby picks them up.
