Lentil & Veggie Bites – Colourful Morsels for Little Hands

Made with red lentils, carrots, and spinach, these baked bites are a nutritious and fun finger food for children aged 2 and up. Low in salt, plant-packed, and wonderfully filling!

Ingredients

Directions

  1. 1

    1) Preheat the oven to 180°C. Place the cooked red lentils in a bowl and mash until smooth using a fork or potato masher.

  2. 2

    2) Add the grated carrot, finely chopped spinach, rolled oats, egg, garlic powder, and cumin to the lentils and mix everything together well.

  3. 3

    3) If the mixture feels too soft, stir in 1–2 extra tablespoons of rolled oats to firm it up — it should be easy to roll into walnut-sized balls.

  4. 4

    4) Take walnut-sized portions of the mixture and roll them into balls or shape them into slightly flattened patties. Grease a baking tray with olive oil and arrange the bites with a little space between each one.

  5. 5

    5) Brush or lightly rub a little olive oil over the tops of the bites. Bake in the preheated oven for 20–22 minutes, until lightly golden.

  6. 6

    6) Leave to cool for 5 minutes after removing from the oven. Serve on a plate for little hands to enjoy, alongside a yoghurt dip or tomato purée.
