Baked Veggie Chicken Nuggets — Soft and Colorful for 2-Year-Olds

No frying, no added salt or sugar: homemade chicken nuggets enriched with carrot and zucchini, baked until tender. A practical main meal for ages 2 and up.

    Cut the chicken breast into small pieces and pulse in a food processor or chop very finely.

    Finely grate the carrot and zucchini, then squeeze out the excess moisture by hand.

    In a bowl, knead the chicken, vegetables, egg, breadcrumbs and parsley into a smooth mixture.

    Take walnut-sized portions and flatten them gently in your palm to form nugget shapes.

    Arrange spaced apart on a parchment-lined tray and drizzle a few drops of olive oil on top.

    Bake in a preheated oven at 190°C (375°F) for 18-20 minutes, until lightly golden on both sides.

    Let them cool; serve to your child in finger-sized, small bites.
