    Pit and peel the ripe apricots, then mash them with a fork into a smooth purée.

    Melt the butter in a small saucepan over low heat.

    Add the semolina and toast gently for 2-3 minutes, until it turns light golden and becomes fragrant.

    Pour in the milk slowly while stirring constantly, whisking to prevent lumps.

    Cook over low heat, stirring, for 4-5 minutes until the semolina absorbs the milk and thickens.

    Take off the heat; stir in the apricot purée and a pinch of cinnamon, then let it cool down.

    Make sure it has cooled to hand-warm before serving, then divide into small bowls for your little one.
