Vegetable Red Lentil Patties for Mothers — A Protein-Friendly Meal for the Recovery Period

Made with red lentils, fine bulgur and grated vegetables, these lentil patties are a filling meal that brings together plant protein, fiber and iron-friendly ingredients for postpartum and breastfeeding mothers during recovery. They cook quickly on the stove, are shaped by hand once cooled, and can be freshened with parsley and lemon to serve as a cool snack or a light dinner.

    Rinse the red lentils and cook them with 2 cups of water over low heat until soft (about 15 minutes).

    Turn off the heat; stir the fine bulgur into the hot lentils, cover, and let it rest for 15 minutes (the bulgur absorbs the liquid and softens).

    Heat the olive oil in a pan; sauté the grated onion, carrot and chopped pointed pepper for 4-5 minutes, then add the tomato paste and cook for another minute or two.

    Add the vegetable mixture to the lentil-bulgur base; add the cumin, salt and black pepper and knead well. The mixture firms up as it cools to warm.

    Add the chopped spring onions, parsley and lemon juice and stir one last time; balance the seasoning.

    With wet hands, take walnut-sized pieces and press them into patties; serve cool with lettuce leaves and lemon wedges.
