Vegetable Chicken Soup for New Mothers: A Tender Meal for Recovery Days

With shredded chicken, seasonal vegetables and a light broth, this soup gently nourishes and warms a mother in the postpartum days.

    Rinse the chicken and bring to a boil in the water, skim off the foam and simmer gently for about 30 minutes.

    Take out the chicken and shred it; strain the broth.

    Lightly sauté the finely chopped carrot, potato and celery in olive oil, then add the strained broth.

    Add the rice and cook for about 20 minutes, until the vegetables and rice are soft.

    Add the shredded chicken and salt and simmer a few more minutes. Serve with parsley and, if you like, a few drops of lemon.
