Spinach and Beef Bulgur — a Warm, Iron- and Protein-Rich Meal for Postpartum Recovery
A warm one-pot meal made with fresh spinach, lean ground beef and bulgur. A satisfying, practical recipe that aims to offer a mother iron, protein and energy during postpartum recovery.

Ingredients
- 1 cup Bulgur
- 150 grams Lean ground beef
- 2 handfuls Fresh spinach (roughly chopped)
- 1 piece Small onion (finely chopped)
- 1 piece Tomato (grated)
- 1.5 tablespoons Olive oil
- 2 cups Hot water
Directions

Heat the olive oil in a medium pot and sauté the finely chopped onion until soft.

Add the ground beef and cook until it changes colour and releases then reabsorbs its juices.

Add the grated tomato and cook for 2-3 minutes, then stir in the washed, roughly chopped spinach and let it wilt gently.

Add the bulgur and stir for a minute or two, pour in the hot water and cover; cook over low heat until the bulgur absorbs the water (about 15 minutes).

Turn off the heat, cover with a clean cloth and let it rest for 10 minutes; serve warm with a bowl of plain yogurt on the side.
🌱 Why is it nourishing?
Spinach is a leafy green rich in plant iron and folate, while lean ground beef provides easily absorbed iron and quality protein. Bulgur adds filling grain fibre, and as a one-pot dish it makes preparing a practical meal in a single step easier. A source of vitamin C alongside, such as a fresh vegetable or a few slices of tomato, can help the body make better use of the iron.
