Red Lentil and Vegetable Patties — A Nourishing Meal for Postpartum Mothers
Made with iron- and protein-rich red lentils, fine bulgur and fresh vegetables, these soft patties are a practical, satisfying meal to support a mother's recovery after birth.

Ingredients
- 1 cup red lentils
- 1/2 cup fine bulgur
- 1 piece onion
- 1 piece carrot (grated)
- 2 tablespoons olive oil
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 bunch parsley (finely chopped)
- 6-8 pieces lettuce leaves (for serving)
- 1/2 piece lemon
Directions

Rinse the red lentils and simmer them in 2 cups of water for about 15 minutes, until soft and the water is absorbed.

Remove from the heat, stir in the fine bulgur, cover and let it rest for 10 minutes.

Meanwhile, finely chop the onion and sauté it in olive oil until translucent; add the tomato paste and grated carrot and cook for another 2-3 minutes.

Fold the sautéed mixture into the lentil base; add the cumin and salt and let it cool until just warm.

Add the parsley and knead the mixture well; break off walnut-sized pieces and gently shape them in your palm.

Arrange on lettuce leaves and serve with lemon wedges. Keeps in the fridge for up to 2 days.
