Peach Rice Pudding — A No-Added-Sugar, Soft Summer Dessert for Age 2

Made with tender cooked rice, milk, and the natural sweetness of ripe peach, this rice pudding is a gentle, spoonable dessert for your 2-year-old on hot summer days. No added sugar, honey, or sweetener is used; the sweetness comes entirely from the fruit.

    Rinse the rice under running water several times and drain; removing some of the starch makes the pudding gentler.

    Cook the rice with 1 cup of drinking water over low heat, stirring occasionally, until the water is absorbed and the rice is very soft (about 12-15 minutes).

    Add the milk; cook over low heat, stirring often so it does not stick to the bottom, until it thickens and the rice grains break down well (about 15-18 minutes).

    In a separate bowl, mash the ripe peach and banana together with a fork until smooth.

    Take the pudding off the heat and let it cool; once it is just warm to the touch, stir in the mashed fruit (do not add it while hot, so the natural sweetness and freshness are preserved).

    Divide into small bowls; if you like, sprinkle a tiny bit of cinnamon and add a few small peach pieces on top.

    Serve warm or at room temperature in small portions, with your child seated and always under your supervision; store any leftovers in a sealed container in the fridge for up to one day.
