Olive-Oil Chickpeas with Summer Vegetables — A Light, Iron- and Protein-Rich Meal for New Mothers
A light dish of drained chickpeas, zucchini, peppers and tomatoes simmered in olive oil and finished with lemon and fresh herbs. Rich in iron, protein and fibre and just as good warm or at room temperature, it is a practical choice for mothers during the recovery weeks of summer.
Ingredients
- 1.5 cups Cooked chickpeas (or drained canned)
- 1 piece Zucchini
- 1 piece Red or green pepper
- 2 pieces Tomato
- 1 piece Onion
- 1 clove Garlic
- 3 tablespoons Olive oil
- 0.5 piece Lemon
- a few sprigs Fresh parsley or dill
- to taste Salt and black pepper
- 0.5 cup Water
Directions

Finely chop the onion and garlic and soften them in olive oil over low heat in a wide pan.

Dice the pepper and zucchini, add them to the pan and cook for a few minutes, stirring.

Grate or finely chop the tomatoes, add them and cook until they release their juices.

Add the drained chickpeas and half a cup of water; cover and simmer over low heat until the vegetables are tender.

Before removing from the heat, season with salt and black pepper to taste; stir in the lemon juice and finely chopped fresh herbs.

Let it rest for a few minutes and serve warm or at room temperature.
