    Rinse the chicken and place it in a pot, add the water and bring to a boil; gently skim off the foam that rises to the surface with a spoon.

    Add the onion, carrot and celery stalk; simmer over low heat until the chicken is tender, about 40 minutes.

    Remove the chicken, let it cool slightly and shred it; strain the broth through a fine sieve to clarify it.

    Return the strained broth to the stove, add the rice and cook until the rice is soft.

    Return the shredded chicken to the soup, stir in the salt and olive oil, and bring to a brief boil.

    Before taking it off the heat, sprinkle with fresh parsley; squeeze a little lemon over each bowl when serving.
