Lentil & Spinach Patties – Iron-Rich Palm-Sized Energy Bites
Made with red lentils and spinach, these easy little patties are a one-handed, make-ahead energy boost for postpartum and breastfeeding mums tackling iron deficiency and fatigue.
Ingredients
- 1 cup red lentils (cooked and drained)
- 1 handful fresh spinach (finely chopped)
- 1 egg
- 3 tablespoons whole wheat flour
- 2 tablespoons olive oil
- 1 pinch salt and black pepper
- ½ lemon (juiced)

1) Place the cooked, drained red lentils in a large bowl and mash them with a wooden spoon or fork — no need to make them completely smooth; a little texture is perfect.

2) Add the finely chopped spinach and crack in the egg. Season with salt and black pepper and stir everything together gently.

3) Add the whole wheat flour a little at a time, mixing until you have a dough that doesn't stick to your hands and holds its shape. If the mixture feels too wet, add an extra tablespoon or two of flour depending on how moist your lentils are.

4) With damp hands, shape the mixture into walnut-sized balls and gently flatten them into patties.

5) Heat the olive oil in a non-stick pan over medium heat. Cook the patties for 3–4 minutes on each side until golden brown.

6) Transfer the cooked patties to a plate and squeeze the lemon juice over the top. Serve with plain yoghurt or sliced tomatoes on the side.

7) Storage tip: Once cooled, keep the patties in an airtight container in the fridge for up to 2 days, or wrap them tightly and freeze for up to 1 month.
