Chilled Beetroot-Yogurt Soup — An Iron-Friendly, Refreshing Meal for New Mothers
A velvety bowl of boiled beetroot, strained yogurt and fresh mint blended smooth and well chilled. It cools you in the summer heat while offering a light yet satisfying meal for mothers in their postpartum recovery.

Ingredients
- 1 medium Boiled red beetroot
- 1 cup Strained (Greek) yogurt
- 0.5 cup Cold water or vegetable stock
- 1 small clove Garlic
- 1 tablespoon Fresh mint (chopped)
- 1 tablespoon Olive oil
- 1 teaspoon Lemon juice
- 1 pinch Salt
Directions

Peel the beetroot (boil until tender first if not already cooked) and cut it into small pieces.

Blend the beetroot with the yogurt, cold water, garlic and lemon juice until smooth and velvety.

Stir in a pinch of salt and the olive oil; adjust the consistency with a little more water to taste.

Chill the mixture in the refrigerator for at least 30 minutes.

Garnish with chopped fresh mint and serve cold; you may add a slice of orange or a few tomatoes on the side for vitamin C.
