Broccoli & Potato Mash – Spring's Green Spoonful

Made with fresh broccoli and tender potatoes, this creamy mash is a nutritious and delicious main meal option for children aged 2 and up.

    1) Peel the potatoes and cut them into cubes. Break the broccoli into small florets. Cook both together in plenty of unsalted water for about 15 minutes, until completely tender. Set aside a cup of the cooking water.

    2) Finely chop the garlic clove. Gently warm the olive oil in a small pan, then sauté the garlic over low heat for 30 seconds until fragrant. Remove from the heat.

    3) Drain the cooked potatoes and broccoli. Blend or mash with a fork until smooth.

    4) Stir in the garlic-infused olive oil and the warm milk. Add one or two tablespoons of the reserved cooking water to reach your desired consistency and mix well.

    5) Crumble the low-salt white cheese into the mash and stir until fully combined.

    6) Finely chop the fresh parsley and sprinkle it on top. Serve warm. You can also shape the mash into small balls that little ones can easily pick up with a spoon or their fingers.
