Baked Veggie and Beef Potato Bake — A Soft Main Meal for 2-Year-Olds
A soft, oven-baked main meal for children aged 2 and up. In this practical recipe, lean minced beef blended with grated vegetables is layered over boiled, mashed potato — easy to mash with a fork.
Ingredients
- 150 g Lean minced beef
- 2 medium Potato (boiled and mashed)
- 1 piece Carrot (grated)
- 1 small Zucchini (grated)
- 1 piece Tomato (peeled and grated)
- 1 tablespoon Olive oil
- 1 tablespoon Finely chopped parsley
Directions

Boil the potatoes until soft, peel them, mash smoothly with a fork and spread over the base of a small baking dish.

Heat the olive oil in a pan and gently sauté the grated carrot and zucchini for 3-4 minutes.

Add the minced beef, breaking up any lumps, and cook until it changes colour and the liquid is absorbed.

Stir in the grated tomato and parsley and cook for another 5 minutes, until the mixture dries slightly.

Spread the beef and vegetable mixture evenly over the mashed potato.

Bake in a preheated oven at 180°C for 12-15 minutes, until the top is lightly set.

Once it has cooled to lukewarm, mash with a fork and serve in small bites your child can eat comfortably.
