A Tender Bowl for Postpartum Mothers: Nourishing Chicken Broth Soup

A warm bowl of comfort for the early postpartum days: slowly simmered bone-in chicken, gently scented with garden vegetables, made to softly nourish a breastfeeding mother. Simple ingredients, made at home, with ease.

    Gently rinse the chicken under running water and place it in a large pot.

    Add the cold filtered water; bring slowly to a simmer over medium heat and skim off the foam that rises to the surface.

    Once the foam is cleared, add the carrots, celery, onion, bay leaf and peppercorns; lower the heat.

    Simmer gently with the lid half on for about 60-70 minutes; add a little hot water if the liquid reduces too much.

    When the chicken is tender, remove it from the heat; shred the chicken and strain the broth.

    Return the shredded chicken and cooked carrots to the clear broth, add the rock salt and stir.

    Just before serving, finish with olive oil, lemon juice and fresh parsley; let it cool slightly and warm yourself with a bowl while your baby is napping.
