Whole-Grain Vegetable Bulgur Pilaf — A Restorative Meal for New Mothers

A filling, easy-to-digest whole-grain bulgur pilaf enriched with fiber and seasonal vegetables that may help you gently recover during the postpartum period.

    Heat the olive oil in a wide pot and gently sauté the onion until softened.

    Add the grated carrot and chopped pepper and stir for 2-3 minutes.

    Add the zucchini and sauté for a few more minutes.

    Add the grated tomato and cook until the liquid is absorbed.

    Add the rinsed and drained bulgur and toast for a minute or two; season with salt and black pepper.

    Pour in the hot water or vegetable stock; once it boils, simmer over low heat until the liquid is absorbed (about 15 minutes).

    Remove from the heat, let it rest covered for 10 minutes, fold in the fresh mint and serve warm.
