Vegetable Bulgur Pilaf for New Mothers — A Filling, Iron-Friendly Meal for the Recovery Weeks
Made with bulgur, chickpeas and seasonal vegetables, this warm pilaf is an iron- and fiber-friendly recipe you can put together easily and enjoy as a filling meal during the postpartum weeks. The natural flavors of tomato and pepper blend with the bulgur, while the plant protein and iron of chickpeas offer gentle support through the recovery days.

Ingredients
- 1.5 cup Coarse pilaf bulgur
- 1 piece Onion
- 2 piece Tomato
- 1 piece Red bell pepper
- 0.5 cup Cooked chickpeas
- 1 tablespoon Tomato paste
- 3 tablespoon Olive oil
- 3 cup Hot water or vegetable stock
- 1 teaspoon Salt
- 1 pinch Black pepper
- 1 teaspoon Cumin (optional)
- 0.5 bunch Fresh parsley
Directions

Finely chop the onion and dice the red pepper. Heat the olive oil in a wide pot over medium heat and sauté the onion and pepper for 3-4 minutes until softened.

Add the tomato paste and cook, stirring, for about 1 minute until fragrant.

Add the grated or finely chopped tomato and cook until the liquid reduces and the oil rises to the surface.

Stir in the drained chickpeas and mix a few times.

Add the rinsed and drained bulgur and toast it, stirring, for 2-3 minutes so it coats with the oil.

Pour in the hot water or vegetable stock, add the salt, black pepper and cumin if using. Once it boils, lower the heat, cover and cook for 12-15 minutes until the liquid is absorbed.

Take off the heat, place a clean cloth under the lid and let it rest for 10 minutes. Fold in the chopped parsley and serve warm.

With its fiber and slow-releasing carbohydrates, bulgur can help keep you full for longer during the postpartum period. Chickpeas add plant protein and iron, while the vitamin C in tomato and pepper can support the absorption of plant-based iron. Olive oil provides healthy fats and parsley adds iron and vitamins.
