Vegetable Bulgur Pilaf — A Soft Main Meal for 2-Year-Olds

Made with summer vegetables and whole-grain bulgur, this soft pilaf is a filling, practical main meal for your 2-year-old. It cooks with the natural flavour of the vegetables, without added salt or sugar, and is served in small, soft bites.

    Heat the olive oil in a wide pan; stir the finely chopped onion over low heat, without browning, until soft, about 3-4 minutes.

    Add the grated carrot, small-diced zucchini and sweet red pepper; cook for a few minutes until the vegetables begin to soften.

    Add the peeled, small-diced tomato and stir until it releases its juices and softens lightly.

    Add the fine bulgur and stir with the vegetables for 1 minute.

    Pour in the hot water; once it comes to a boil, lower the heat, cover, and cook for 12-15 minutes until the bulgur absorbs the water and turns soft.

    Take off the heat; let it rest covered for 5 minutes, then scatter the fresh parsley if you like.

    Cool to lukewarm and serve to your 2-year-old in small, soft bites, always under your supervision.
