Ingredients
- 1 cup fine bulgur
- 1 piece small-diced zucchini
- 1 piece grated carrot
- 2 pieces peeled, small-diced tomato
- 0.5 piece small-diced sweet red pepper
- 1 small piece finely chopped onion
- 2 tablespoons extra-virgin olive oil
- 2 cups hot water
- 1 tablespoon finely chopped fresh parsley (optional)
Directions
- 1
Heat the olive oil in a wide pan; stir the finely chopped onion over low heat, without browning, until soft, about 3-4 minutes.
- 2
Add the grated carrot, small-diced zucchini and sweet red pepper; cook for a few minutes until the vegetables begin to soften.
- 3
Add the peeled, small-diced tomato and stir until it releases its juices and softens lightly.
- 4
Add the fine bulgur and stir with the vegetables for 1 minute.
- 5
Pour in the hot water; once it comes to a boil, lower the heat, cover, and cook for 12-15 minutes until the bulgur absorbs the water and turns soft.
- 6
Take off the heat; let it rest covered for 5 minutes, then scatter the fresh parsley if you like.
- 7
Cool to lukewarm and serve to your 2-year-old in small, soft bites, always under your supervision.
🌱 Why is it nourishing?
Whole-grain bulgur provides fibre and B-group vitamins, which can gently support your child's energy on an active day. Seasonal vegetables add colour, vitamins and water to the plate, while extra-virgin olive oil offers healthy fat. Its soft texture and small bites suit 2-year-olds who are learning to eat on their own. No added salt or sugar is used; the flavour comes from the vegetables' own natural taste.
