- 1 tbsp Extra virgin olive oil

Slice the cucumber into thin half-moons and cut the feta into small cubes.
- 3
In a wide serving bowl, gently combine the watermelon, cucumber and feta.
- 4
Scatter the coarsely broken walnuts and hand-torn fresh mint leaves over the top.

In a small bowl, whisk together the olive oil, lemon juice and black pepper; drizzle the dressing over the salad.
- 6
Serve right away while cold; eating it without waiting keeps the salad fresh and crisp.
🌱 Why is it nourishing?
Watermelon and cucumber have a high water content that can help support fluid intake on hot days while keeping the plate light. Feta and walnuts add a small amount of protein and healthy fats that can support a feeling of fullness, which may help build a balanced meal. With fresh, no-cook ingredients, this plate can be a practical choice for moms looking for something light yet satisfying.
