Ingredients
- 2 pieces Salmon fillet (skinless)
- 1 piece Zucchini (thinly sliced)
- 1 piece Red bell pepper (cut into strips)
- 8 pieces Cherry tomatoes (halved)
- 2 tablespoons Fresh dill (chopped)
- 2 tablespoons Extra virgin olive oil
- 1 piece Lemon (half juiced, half sliced)
- 1 clove Garlic (finely chopped)
- 1 pinch Black pepper
Directions

Preheat the oven to 200°C and line a baking tray with parchment paper.

Thinly slice the zucchini, cut the red pepper into strips, halve the cherry tomatoes, and spread the vegetables over the tray.

In a small bowl, mix the olive oil, lemon juice, finely chopped garlic, dill, and black pepper to make a sauce.

Drizzle half of the sauce over the vegetables and toss gently.

Place the salmon fillets over the vegetables, brush the remaining sauce over the fish, and top each with a lemon slice.
