Olive Oil Cranberry Bean Pilaki — A Restorative Meal Rich in Iron and Protein for New Mothers
A classic olive oil pilaki simmered with fresh cranberry beans and vegetables. For mothers seeking plant protein, fiber, and iron in the postpartum days, it is a simple, filling meal that can be served warm or at room temperature.
Ingredients
- 500 g Fresh cranberry beans (shelled)
- 1 piece Onion (finely chopped)
- 1 piece Carrot (diced small)
- 1 piece Potato (diced small)
- 2 pieces Tomatoes (grated)
- 2 cloves Garlic (crushed)
- 1/3 cup Extra virgin olive oil
- 2-2.5 cups Hot water
- 1 teaspoon Sugar (optional)
- Salt (to taste)
- 1 piece Lemon (for serving)
- Chopped parsley (for serving)
Directions

Heat the olive oil in a wide pot; sauté the onion and garlic over medium heat for 3-4 minutes until lightly softened.

Add the carrot and potato and stir for a few minutes; then add the shelled fresh cranberry beans and mix.

Add the grated tomatoes and cook for 2-3 minutes until they release and reabsorb their liquid.

Add the hot water, a teaspoon of sugar if you like, and salt to taste; cover and simmer over low heat for 35-40 minutes until the beans are tender.

Remove from the heat and let it cool; pilaki tastes best warm or at room temperature.

When serving, sprinkle generously with chopped parsley and squeeze over the lemon.
