Molasses & Chickpea Bowl – A Spring Bowl Packed with Iron & Energy
Made with grape molasses, cooked chickpeas, and fresh seasonal spinach, this satisfying bowl is a powerhouse meal ready in 20 minutes — easy to eat with one hand and perfect for fighting postpartum fatigue and low iron.
Ingredients
- 1.5 cups cooked chickpeas (canned or pre-cooked)
- 2 handfuls fresh spinach leaves
- 1 tablespoon grape molasses
- 1 tablespoon tahini
- 1 tablespoon olive oil
- 1/2 lemon lemon juice (freshly squeezed)
- 1 pinch salt and red pepper flakes
- 1 teaspoon sesame seeds (optional, for topping)
Directions

1) Heat the olive oil in a large pan over medium heat. Add the spinach and sauté for 2–3 minutes until just wilted. Remove from the heat.

2) Add the cooked chickpeas to the same pan and stir gently until everything is warmed through.

3) In a small bowl, whisk together the tahini, grape molasses, and lemon juice with a fork to make the dressing. If it feels too thick, stir in 1–2 teaspoons of warm water to loosen it up.

4) Spoon the spinach and chickpea mixture into a serving bowl, then drizzle the molasses tahini dressing generously on top.

5) Season lightly with salt and red pepper flakes, and finish with a sprinkle of sesame seeds.

6) Serve straight away, or store in an airtight container in the fridge for up to 1 day — keep the dressing separate and it'll stay fresh for the next day too.

7) 💡 To maximise iron absorption, enjoy a glass of freshly squeezed lemon or orange juice alongside your meal, and try to leave at least 1 hour between eating and having tea or coffee.
