    Cut the chicken breast into thin medallions; toss with a little olive oil, lemon and black pepper and let rest for a few minutes.

    Heat a grill or non-stick pan over medium-high; cook the chicken slices 3-4 minutes per side until lightly golden and fully cooked through, then set aside to rest.

    Wash and gently dry the greens; chop the cucumber and cherry tomatoes and slice the red onion very thinly.

    In a small bowl, whisk together the olive oil, lemon juice, pomegranate molasses, black pepper and a little salt to make the dressing.

    Place the greens in the base of a serving bowl; add the chopped vegetables and the rested grilled chicken on top.

    Drizzle the dressing over the whole bowl, scatter the fresh mint and dill, and serve right away, warm or at room temperature.
