Fresh Yogurt Bowl with Cucumber and Mint — A Light, Satisfying Summer Meal for Mothers

Ingredients
- 2 cups Strained (Greek) yogurt
- 1 piece Cucumber (diced)
- 8 pieces Cherry tomatoes (halved)
- 0.5 cup Boiled and roasted chickpeas
- 1 tbsp Fresh mint (chopped)
- 1 tbsp Fresh dill (chopped)
- 1 tbsp Walnuts (coarsely chopped)
- 1 tsp Extra virgin olive oil
- 1 tsp Lemon juice
- 1 pinch Salt and black pepper
Directions

Spread the strained yogurt across the base of a bowl; stir in the lemon juice and a pinch of salt.

Dice the cucumber and halve the cherry tomatoes.

Pat the boiled chickpeas dry, season with a pinch of black pepper and roast in the oven or a pan for a few minutes until crisp.

Arrange the diced cucumber, tomatoes and roasted chickpeas over the yogurt.

Scatter fresh mint, dill and the coarsely chopped walnuts on top.

Drizzle with extra virgin olive oil and serve right away; enjoy with a slice of whole-grain bread if you like.
