Beef and Chickpea Stew for Breastfeeding Mothers — A Hearty, Iron- and Energy-Rich Meal

    Cut the beef into small pieces; finely chop the onion and crush the garlic. If using dried chickpeas, soak them overnight and boil beforehand.

    Heat the olive oil in a pot, add the beef, and sauté over medium heat until it releases its juices, they reduce, and the meat lightly browns.

    Add the onion and stir until softened; add the garlic and stir until fragrant.

    Add the tomato paste and sauté for a minute or two; then stir in the grated tomato, cumin, and sweet paprika.

    Add the boiled chickpeas and hot water; season with a moderate amount of salt and bring to a boil. Simmer over low heat for 35–40 minutes, until the meat and chickpeas are tender and the sauce thickens.

    Before serving, stir through fresh parsley and serve hot; you can round it out with a bowl of yogurt or whole-grain bread on the side.
