Baked Veggie Mini Meatballs — A Soft, Colourful Main for 2-Year-Olds
Made tender with grated vegetables, these baked meatballs are an easy-to-hold, well-loved main for little hands.

Ingredients
- 250 g lean beef mince
- 1 small carrot (grated)
- 1/2 small zucchini (grated, squeezed dry)
- 1 egg
- 3 tablespoons breadcrumbs
- 1 tablespoon finely chopped parsley
- 1 teaspoon olive oil
Directions

Heat the oven to 190°C and line a tray with baking paper.

In a bowl, knead the mince with the grated carrot and zucchini, egg, breadcrumbs and parsley.

Shape the mixture into walnut-sized balls and flatten slightly.

Brush or spoon a little olive oil over the meatballs.

Bake for 20-25 minutes until fully cooked through; the centre should not stay pink.

Let cool and serve to your child in soft pieces.

Beef mince provides protein, iron and zinc, which matter at this age, while grated carrot and zucchini add both moisture and fibre. Baking lets you use less oil than frying. The soft texture suits little ones whose chewing skills are developing.
