Baked Vegetable Nuggets — A Soft, Colorful Main Dish for 2-Year-Olds

Made with grated vegetables, a little chicken and egg, these small nuggets bake in the oven with just a touch of oil; they can be a soft, colorful, hand-held main dish for your 2-year-old. They contain no added salt or sugar.

    Heat the oven to 190°C and line a tray with baking paper.

    Cook the chicken breast thoroughly and chop it very finely; boil the potato and mash until smooth.

    Finely grate the carrot and zucchini; gently squeeze out the excess liquid from the zucchini.

    In a bowl, mix the chicken, potato, vegetables, egg and breadcrumbs into a soft dough, then stir in the parsley.

    With damp hands, form small, flat nugget shapes; keep them thin and soft rather than round and firm.

    Brush them lightly with olive oil and bake at 190°C, without frying, for 18-20 minutes until cooked through.

    Once cooled to lukewarm, break into small soft pieces suited to your child's chewing ability and serve under supervision.
