Ingredients

Directions

  1. 1

Finely grate the zucchini and carrot; gently squeeze out the excess liquid from the zucchini.

  2. 2

Beat the eggs in a bowl, add the milk and whisk until smooth.

  3. 3

Add the grated vegetables, cheese and parsley, and stir gently.

  4. 4

Heat the olive oil in a non-stick pan over medium-low heat and spread the mixture evenly.

  5. 5

Cover and cook over low heat until the bottom is lightly golden (about 5-6 minutes), then fold in half and cook for another minute or two.

  6. 6

Let the omelet cool a little; for age 2, cut it into small pieces and check the temperature before serving.

🌱 Why is it nourishing?

Eggs offer quality protein, choline and B vitamins for children aged 2 and up. Zucchini and carrot add fiber, vitamin A and natural color, while cheese contributes calcium. With its soft texture and small pieces, this omelet can be a balanced, easy-to-chew breakfast in the mornings.

Maiyko's note

In the Maiyko kitchen we love fresh, seasonal vegetables and simple ingredients; this soft omelet is a practical breakfast your little one can explore with a spoon or with their hands. To reduce the risk of choking, cut the omelet into small pieces, check its temperature before serving, and stay with your child throughout the meal.
