Walnut & Fennel Oat Cookies — A Filling, Milk-Friendly Treat for Breastfeeding Mothers
Soft, oven-baked cookies made with oats, walnuts and fennel seeds. Traditionally loved during breastfeeding, these ingredients give mothers a practical, filling snack rich in fibre, healthy fats and energy. Because they can be made ahead and stored, they stay within easy reach on busy days.

Ingredients
- 1.5 cups Rolled oats
- 0.5 cup Whole-wheat flour
- 0.5 cup Coarsely chopped walnuts
- 1 teaspoon Fennel seeds (lightly crushed)
- 1 piece Egg
- 3 tablespoons Coconut oil or liquid oil (melted)
- 3 tablespoons Grape molasses
- 0.5 teaspoon Cinnamon
- 1 pinch Salt (optional)
Directions

Heat the oven to 175°C and line a baking tray with parchment paper.

In a large bowl, mix the rolled oats, whole-wheat flour, chopped walnuts, fennel seeds and cinnamon.

In a separate bowl, beat the egg, then add the melted oil and grape molasses and stir until smooth.

Pour the wet mixture over the dry ingredients; add a pinch of salt if you like and work with a spoon into a moist dough.

Take walnut-sized pieces of dough, place them on the tray and flatten them gently with your hand.

Bake in the preheated oven for 15-18 minutes, until the edges turn golden.

Let them rest on the tray for a few minutes, then cool on a wire rack. They stay fresh for 3-4 days in a sealed container at room temperature.
