Walnut and Oat Energy Balls for Mothers — A Filling, Practical Snack
No-bake energy balls made with fine rolled oats, coarsely chopped walnuts and the natural sweetness of dates. For breastfeeding and postpartum mothers they can be an easy-to-carry, filling snack on busy days.

Ingredients
- 1 cup Fine rolled oats
- 1/2 cup (~50 g) Walnuts (coarsely chopped)
- 7 pieces Dried dates (pitted)
- 2 tablespoons Tahini
- 1/2 teaspoon Ground cinnamon
- 2 tablespoons Desiccated coconut (for coating)
- 1 tablespoon Water (if needed, for consistency)
Directions

Pit the dried dates and soak them in warm water for about 10 minutes; drain once softened.

Mash the softened dates into a paste in a food processor or with a fork.

In a wide bowl, combine the rolled oats, coarsely chopped walnuts and cinnamon.

Add the date paste and tahini and knead well by hand or with a spoon; if the mixture is crumbly, add water one tablespoon at a time.

Pinch off walnut-sized pieces and roll them into balls in your palm.

Coat the balls in desiccated coconut and chill in the fridge for 20-30 minutes; serve fresh.
