Vegetable Quinoa Salad — A Light, Filling and Refreshing Summer Meal for Mum

Made with quinoa, fresh cucumber, cherry tomatoes and mint, this refreshing summer salad gives mum a light, satisfying and filling meal. With olive oil and lemon, it is a practical and nourishing option.

    Rinse the quinoa well under plenty of water. In a pot with 2 cups of water, cook over low heat with the lid on until the water is absorbed, about 12-15 minutes.

    Take it off the heat and let it rest, covered, for 5 minutes; then fluff with a fork and leave to cool to room temperature.

    Chop the cucumber, cherry tomatoes, red onion, parsley and mint and place them in a large bowl.

    Add the cooled quinoa on top of the vegetables.

    Drizzle with olive oil and lemon juice; season with a little black pepper to taste if you like, toss and serve fresh.
