Vegetable Egg Pancakes — A Soft Breakfast for 2-Year-Olds
Brightened with grated courgette and carrot, these soft pancakes are a practical and nourishing breakfast option for 2-year-olds. Their easy-to-hold texture also makes them ideal for little hands.

Ingredients
- 2 pieces eggs
- 3 tablespoons whole wheat flour
- 100 ml milk
- 1/2 piece courgette (grated)
- 1/2 piece carrot (grated)
- 1 teaspoon olive oil
Directions

Finely grate the courgette and carrot, and gently squeeze out the excess water.

Beat the eggs; add the milk and whole wheat flour and mix until smooth.

Stir the grated vegetables into the batter.

Lightly grease a non-stick pan with olive oil and heat over low-medium heat.

Pour small ladles of batter; cook each side for 2-3 minutes until golden.

Once lukewarm, cut into strips and serve; your child can easily hold them by hand.

Eggs provide quality protein, valuable for your child's growth. Courgette and carrot add softness to the pancake and can offer vitamins and fibre. Whole wheat flour contains more fibre than refined flour and may help keep little tummies full.
