Vegetable Egg Crepe — A Soft, Practical Breakfast for 2-Year-Olds
Enriched with grated zucchini, carrot and fresh parsley, this thin egg crepe makes a soft, satisfying breakfast for 2-year-olds. It is quick to prepare and easy for little hands to hold — ready in just a few minutes even on busy mornings.

Ingredients
- 1 piece Egg
- 2 tablespoons Whole wheat flour
- 3 tablespoons Milk
- 2 tablespoons Grated zucchini (lightly squeezed)
- 1 tablespoon Grated carrot
- 1 teaspoon Finely chopped fresh parsley
- 1 teaspoon Olive oil (for cooking)
Directions

Finely grate the zucchini and carrot; gently squeeze the zucchini in your palm to remove excess water.

Crack the egg into a bowl and whisk, then add the milk and mix.

Add the whole wheat flour little by little to make a smooth, pourable batter.

Fold in the grated zucchini, carrot and parsley and stir gently.

Heat a non-stick pan with a little olive oil; pour the batter in a thin layer.

Once the underside turns golden, carefully flip and cook the other side.

Let the crepe cool slightly, cut it into small bites and serve to your little one.
