Vegetable Egg Crepe — A Filling, Colorful Summer Breakfast for 2 Years
Bringing together grated zucchini and carrot, finely chopped parsley, egg and whole wheat flour, this soft crepe offers your 2-year-old a filling, colorful breakfast made without added salt or sugar. Slice it thin and serve under your supervision.

Ingredients

- 4 tablespoons Whole wheat flour
- 4 tablespoons Milk (full-fat)
- 3 tablespoons Grated zucchini (excess water squeezed out)
- 2 tablespoons Grated carrot
- 1 tablespoon Finely chopped parsley
- 1 teaspoon Olive oil (for cooking)
Directions

Finely grate the zucchini and carrot; gently squeeze the excess water out of the zucchini in your palm. This helps the crepe cook more easily.

Crack the eggs into a bowl and whisk; add the milk and stir. Add the whole wheat flour little by little to get a lump-free, flowing batter.

Add the grated zucchini, carrot and finely chopped parsley to the batter and stir gently. No added salt or sugar is needed; the vegetables bring natural flavor.

Heat a non-stick pan over low heat and lightly grease it with a little olive oil. Pour a ladle of batter and spread a thin crepe.

Cook the crepe over low heat until both sides are golden and the inside is fully cooked. Make sure the egg is thoroughly cooked.

Let the crepe rest for a few minutes to cool, then cut it into thin strips or small bites your 2-year-old can hold comfortably, and serve under your supervision.
