Ingredients

Directions

  1. 1

Finely grate the zucchini and carrot; gently squeeze out the excess liquid from the zucchini.

  2. 2

Crack the eggs into a bowl and whisk; add the flour and stir until you have a smooth, lump-free mixture.

  3. 3

Add water little by little for a pourable consistency; fold in the grated vegetables and parsley gently.

  4. 4

Heat a non-stick pan over low heat and brush with a little olive oil.

  5. 5

Pour a spoonful at a time to make small, thin pancakes; cook until both sides are light golden.

  6. 6

Remove from the heat and let cool; cut into small, soft bites suitable for a 2-year-old.

  7. 7

Stay with your child during the meal and always feed under supervision.

🌱 Why is it nourishing?

Egg can help add a soft-textured source of protein to your child's breakfast. Grated zucchini and carrot can bring colour, fibre and vitamins to the meal. Cooked small and thin, these pancakes can be a filling option your 2-year-old can hold comfortably.

Maiyko's note

Offering vegetables in a familiar breakfast form can help your child meet new flavours gently. Adjust the texture and size to your child's chewing ability.
