Tomato Vermicelli Soup — A Soft, Warming Summer Soup for 2-Year-Olds
Cooked with ripe summer tomatoes, this soft vermicelli soup is a warm, filling meal for your 2-year-old. It is prepared without added salt or sugar, with the natural sweetness of the tomatoes and the softness of olive oil.

Ingredients
- 3 pieces ripe tomatoes, peeled and grated
- 3 tablespoons orzo-style vermicelli
- 1 small piece finely chopped onion
- 1.5 tablespoons extra-virgin olive oil
- 3 cups hot water or salt-free vegetable stock
- 1 teaspoon dried mint or finely chopped fresh basil (optional)

Heat the olive oil in a medium pot; stir the finely chopped onion over low heat, without browning, until soft, about 3-4 minutes.

Add the peeled, grated tomato; cook over low heat for 5-6 minutes until it releases its juices, thickens and sweetens.

Pour in the hot water or salt-free vegetable stock; once it comes to a boil, add the vermicelli.

Lower the heat and cook for 10-12 minutes, stirring now and then, until the vermicelli is fully soft.

If you like, add the dried mint or fresh basil and cook for 1 more minute; take off the heat.

For a smoother texture for your 2-year-old, lightly mash the soup or blend it briefly.

Cool to lukewarm and serve in small portions with a spoon, always under your supervision.
