Ingredients

Directions

  1. 1

Rinse the spinach leaves thoroughly under running water; remove the stems and roughly chop the leaves.

  2. 2

Peel the potato and dice into small cubes; place in a small saucepan with half a cup of water.

  3. 3

Simmer the potato over medium heat for about 8-10 minutes, until soft enough to mash easily with a fork.

  4. 4

In the last 2 minutes, add the chopped spinach to the pan; cook until the colour turns bright green, then remove from heat.

  5. 5

Drain through a sieve, reserving a spoonful or two of the cooking water.

  6. 6

Blend or mash with a potato masher until smooth enough for your baby.

  7. 7

Loosen with breast milk, formula or the reserved cooking water until you reach a gentle consistency; do not add salt or sugar.

  8. 8

Make sure the serving temperature is lukewarm (test a drop on your wrist) and offer with a small soft spoon.

🌱 Why is it nourishing?

Spinach can contribute plant-based iron and folate to a growing baby's iron needs; combined with potato, it becomes a more accepted meal in both texture and flavour. The soft starch of potato offers a silky consistency and can support energy. Vitamin C from spring greens may help the body absorb plant-based iron. With no added salt or sugar, it stays a simple, gentle start for your baby's palate.
