Spinach and Cheese Omelette — An Iron- and Protein-Friendly Practical Meal for Mothers
Made with fresh spinach, eggs and white cheese, this practical omelette is a filling meal that new mothers can cook in just a few minutes on busy days. The quality protein of eggs meets the iron and folate in spinach; a few minutes are enough for a light, balanced and warm plate.

Ingredients
- 3 pieces Eggs
- 2 cups Fresh spinach (finely chopped)
- 100 g White cheese (crumbled)
- 2 tablespoons Milk
- 1 tablespoon Olive oil
- 1 pinch Salt
- 1 pinch Black pepper
- 1 tablespoon Fresh parsley (optional)
Directions

Crack the eggs into a wide bowl, add the milk, a pinch of salt and black pepper, and whisk.

Wash the fresh spinach and chop it finely, removing any coarse stems.

Heat the olive oil in a wide pan over medium heat, add the chopped spinach and sauté for 1-2 minutes until it releases its water and slightly wilts.

Pour the whisked eggs into the pan and sprinkle the crumbled white cheese on top.

Cook over low heat until the bottom turns golden and the top is set and no longer sticky; fold in half if you like.

Garnish with fresh parsley and serve warm; wholegrain bread and a few slices of tomato go well alongside.
