Spinach and Cheese Omelet — A Quick, Iron- and Protein-Rich Meal for Mothers
A satisfying omelet made in minutes with fresh spinach, eggs and cheese. A warm, practical meal that offers a mother iron, protein and energy on busy days.

Ingredients

- 1 handful Fresh spinach (finely chopped)
- 2 tablespoons Curd cheese or low-salt white cheese
- 1 tablespoon Olive oil
- 1 pinch Black pepper (optional)
Directions

Wash the spinach well and chop it finely; beat the eggs in a bowl.

Heat the olive oil in a small pan over medium heat and gently sauté the spinach for 1-2 minutes.

Pour in the beaten eggs and crumble the cheese over the top.

Lower the heat, cover, and cook for 4-5 minutes until the bottom is golden and the top is set.

Fold the omelet in half and serve warm; a slice of whole-grain bread pairs well alongside.
