Dice the zucchini, red pepper and eggplant; toss with one tablespoon of olive oil and roast at 200°C for 18-20 minutes until the edges are lightly golden.

  3. 3

Halve the cherry tomatoes and finely chop the parsley.

  4. 4

Combine the cooled quinoa, roasted vegetables and tomatoes in a large bowl.

  5. 5

Drizzle with a dressing of the remaining olive oil, lemon juice and an optional pinch of salt; add the parsley and toss gently.

  6. 6

Serve at room temperature or lightly chilled.

🌱 Why is it nourishing?

With its plant protein and fiber, quinoa may help you feel full for longer, while the roasted summer vegetables add low-calorie, satisfying volume and vitamins. Olive oil and lemon bring a light freshness and healthy fats to the meal. Light yet filling, it can be a practical choice for mothers who want to eat in a balanced, moderate way on hot days.
