Ingredients
- 1 can (~150 g) Drained tuna (in water)
- 2 handfuls Mixed greens (lettuce, arugula)
- 10 pieces Cherry tomatoes
- 1 piece Cucumber
- 0.5 piece Red onion (thinly sliced)
- 0.5 cup Boiled white beans (optional)
- 2 sprigs Fresh parsley (chopped)
- 1 tablespoon Olive oil
- 1 tablespoon Lemon juice
- 1 pinch Salt
- 1 pinch Black pepper
Directions

Wash and drain the greens and place them in a wide bowl.

Wash the cucumber and cherry tomatoes and chop them into bite-sized pieces; slice the red onion thinly.

Drain the tuna and scatter it over the salad in large flakes; add the boiled white beans too if you like.

Whisk the olive oil, lemon juice, a pinch of salt and black pepper in a small bowl to make the dressing.

Drizzle the dressing over the salad and toss gently.

Garnish with chopped fresh parsley and serve fresh right away; you may offer a slice of whole-grain bread on the side.
