Ingredients
- 2 cups Strained (Greek-style) yogurt
- 1 medium Cucumber (grated or finely diced)
- 1 cup Cold drinking water (for consistency)
- 1 small clove Garlic (very little, crushed — optional)
- 1 tablespoon Fresh dill (finely chopped)
- 1 tablespoon Fresh mint (finely chopped)
- 1 tablespoon Olive oil
- 1 pinch (in moderation) Salt
- 1 teaspoon Lemon juice (optional)
Directions

Put the strained yogurt in a wide bowl; whisk in the cold drinking water a little at a time until you have a smooth, flowing consistency.

Wash and grate the cucumber or dice it finely; lightly drain any excess water and stir it into the yogurt.

If you like, add the very small amount of crushed garlic; stir in the finely chopped dill and mint.

Balance the taste with a pinch of salt and, if you wish, a teaspoon of lemon juice.

Drizzle the olive oil over the top; chill the soup in the fridge for at least 20-30 minutes.

Once well chilled, divide into bowls and serve cool, with a few fresh mint leaves if you like.
