Pumpkin Soup — A Soft, Naturally Sweet Autumn Soup for Age 2
A warm, naturally sweet autumn soup where pumpkin, carrot and potato are simmered until soft and blended smooth. From age 2, lightly seasoned and gentle, easy to eat with a spoon.
Ingredients
- 2 cups Pumpkin (peeled, cut into small cubes)
- 1 piece Carrot (cut into small cubes)
- 1 piece Small potato (cut into small cubes)
- 0.5 piece Onion (finely grated)
- 1 tablespoon Extra virgin olive oil
- 2.5 cups Drinking water
- 1 tablespoon Fresh parsley (finely chopped, optional)
Directions

Wash your hands, the cutting board and the pot and spoons you will use. Cut the pumpkin, carrot and potato into small cubes your child can mash easily.

Warm the olive oil in the pot; add the finely grated onion and gently soften it over low heat.

Add the carrot and potato cubes and sauté, stirring, for a few minutes; then add the pumpkin.

Pour in the drinking water, cover and simmer over low heat for about 20 minutes, until the vegetables are soft enough to mash easily with a fork.

Take off the heat and let it cool a little; blend with a hand blender, or mash part of it with a fork, into a smooth, soft consistency.

Leave it in the natural sweetness of the pumpkin, without adding salt or sugar; sprinkle with fresh parsley if you like.

Test a spoonful on the back of your hand to check it is lukewarm; serve in small spoonfuls with your child seated and supervised.

Carrot and potato offer different vitamins and fibre and can support a balanced bowl. The smooth, flowing texture can gently help develop spoon-eating skills.
