Pomegranate Seasonal Salad for Mothers — A Light and Satisfying Meal
A light salad of seasonal greens, pomegranate seeds and walnuts, dressed with olive oil and lemon. A practical, satisfying and refreshing meal for postpartum and breastfeeding mothers.

Ingredients
- 4 cups Seasonal greens (lettuce, arugula, purslane)
- 1 cup Pomegranate seeds
- 3 tablespoons Walnuts (coarsely chopped)
- 2 tablespoons Olive oil
- 1 tablespoon Lemon juice
- 1 handful Fresh mint leaves
- 1 pinch Salt
Directions

Wash the seasonal greens, drain them well and tear them into large pieces into a bowl.

Scatter the pomegranate seeds and the coarsely chopped walnuts on top.

In a small bowl, whisk together the olive oil, lemon juice and a pinch of salt.

Drizzle the dressing over the salad and toss gently.

Garnish with fresh mint leaves and serve right away.
