Iron-Rich Green Lentil Soup for the Breastfeeding Mother

Made with green lentils, vegetables and a pinch of spice, this warming soup offers a mother iron and energy support on busy days.

    Heat the olive oil in a pot and sauté the onion until soft.

    Add the carrot and potato and stir for a few minutes.

    Add the rinsed lentils, cumin and water; bring to a boil.

    Simmer on low heat for about 30 minutes until the lentils and vegetables are very soft.

    Blend until smooth if you like, or leave it with some texture.

    Before serving, stir in the lemon juice and season with salt and pepper to taste.
