Baked Vegetable Chickpea Bowl for Mothers — A Filling, Light Meal for the Postpartum Period

A filling, light and practical bowl made with oven-baked chickpeas and colourful summer vegetables, ideal for the postpartum and breastfeeding period. A gently spiced mother's meal rich in fibre and plant protein.

    Preheat the oven to 200°C; drain the cooked chickpeas well and gently pat them dry with a paper towel.

    Place the courgette, red pepper, cherry tomatoes and red onion in a roasting tray, then add the drained chickpeas.

    Drizzle over the olive oil, cumin, sweet paprika, a moderate amount of salt and the lemon juice, and toss everything gently.

    Roast for 25-30 minutes, until the edges of the vegetables are lightly golden; stir once halfway through.

    Remove from the oven and toss with the freshly chopped parsley.

    Serve warm or lukewarm over a handful of rocket or fresh spinach.
